Where the coffee come from?

We are located in Nubarrones, Nueva Segovia, Nicaragua. We are a single state coffee producing company. Currently with 90 acres of coffee trees and 90 acres of virgin land. The higher the elevation the cooler the temperature which slows the speed in which the beans grow, allowing for a more profound development and a harder bean. The plant at that point commits more vitality to bean generation which in turn produces more of the sugars/ caffeine that makes those astonishing tastes in your favorite coffee. The combination of the weather and altitude, allows the coffee trees to provide a variety of flavors. Our magic starts with the location of the coffee trees and ends with the quality of our roasting profile.

What is specialty coffee and is your coffee specialty? 

We work every day to have a specialty coffee at Finca KOA. Specialty coffee is a coffee that meets the physical and sensory standards determined by the Specialty Coffee Association. In short, it means a coffee that is a fresh harvest, free of defective beans and flavor. Specialty coffee represents a very small percentage (around 5%) of the world's coffee.

Located Along the Border of Honduras and Nicaragua, our farm of 190 acres in Nubarrones, Nueva Segovia, Nicaragua, a small town known for housing various coffee farms. Surrounded completely by forest, at sunrise it is usually between 30°- 40° F, and by the afternoon temperatures have risen between 50°- 70° F. The combination of elevation, temperature and space, allows us to provide our clientele with the highest quality coffee known as Specialty Coffee.

Where Does It Come From?

Contrary to popular belief, Lorem Ipsum is not simply random text. It has roots in a piece of classical Latin literature from 45 BC, making it over 2000 years old.

Which coffee should I try first?

All our coffees are worked from start to finish with all the quality to be able to surprise you. But if you are looking for an initial recommendation all of us at Finca KOA agree that you should start with Dulce MIA and advance between Caturra and Maracaturra with their different processes (Washed, Honey and Natural) so that you can find the different flavors yourself.

Do you have certifications?

Not at the moment, but we are looking for international organizations that have a presence in Nicaragua. Those who can really help us to make a difference through Finca KOA.

What do you grow and how often do you harvest? 

In our home country Nicaragua, our farm located between 1300 to 1800 Meters above sea level is the perfect level to produce Caturra and Maracaturra these are the two types of coffee beans from Finca KOA at the moment and our harvest usually takes place in mid-March and April.

Known as the Elephant bean, Maracaturra is a natural mutation of the Typica bean causing it to be especially large compared to other beans. The leaves of the tree are also large its self and are susceptible to leaf rust, making it a very high maintenance tree. Being that they are usually located 1,200+ above sea level, the growth process of the bean is much slower allowing it to grow bigger and stronger.

The Caturra Bean, discovered in Brazil in the early 1900's, is a mutation of the Bourbon variety, with and interesting modification that causes "dwarfism" leading to the bean being very small. Being that the bean is so small, so is the tree, allowing farms to plant them closer to each other, which in turn allows for a much higher production than bigger bean varieties.

What is your Harvest Method?

Hand Picked (Selective). In Nicaragua, as in many other regions or countries during the harvest season, we build a team that helps us in the Hand Picked process of all the berries that are ready to continue their process. The manual harvesting makes it a slower process but it favors the economy of the region.

What is your Drying Method?

Currently there are three methods which we use at Finca KOA:

Natural
This is perhaps the oldest and simplest as it requires little machinery (although more labor). The method consists of drying the whole cherry after it has been harvested, without removing the skin or peel.

Washed
The other fundamental difference is that in the wet process the pulp is separated from the coffee beans, which does not happen in the natural process. The mucilage is completely removed and for this the beans are placed in fermentation tanks until the mucilage that covers the parchment loses its mucous texture and acquires a rougher texture.

Honey
This way of processing coffee is fundamentally the same as in the washed method, with the only difference being that in the honey process the mucilage is NOT removed but rather the coffee is dried with this substance still covering the beans.

Is my coffee freshly roasted?

Short answer, Yes. Usually take 1-2 business days from the order date for us to roast, pack and ship. We send most of our coffee to be roasted to order, so when your coffee arrives it should be between 1 and 7 days after roasting. Coffee is best prepared when it has had time to degas (5-7 days after roasting). The aroma of the coffee will reach its maximum intensity and freshness during the first month after roasting. Therefore, if you are thinking of subscribing to a subscription, it is best to order a maximum of one month's supply if you want to get the best from your beans.

How long will it last? Should I take care of my coffee after opening?

The most important thing when it comes to storing coffee is humidity. Keep coffee away from humidity until it is brewed. If you ordered your ground coffee it is best to store it in a place at room temperature and close the package tightly after opening it will stay fresh for up to 4 weeks. If you have coffee beans the well sealed package will keep the whole beans fresh for more than a month.

How do you roast your coffee?

We have found our coffee to do better in a Light- Medium roast but we are able to provide coffee beans roasted to Medium with notes of Caramelized Sugar, roasted nuts, followed by a light baker’s chocolate finish. For an order of Medium roasted coffee, we would need an additional 3-5 days.

What equipment do I need to fully enjoy specialty coffee?

It depends a lot on what you like, initially we recommend a coffee grinder, independent of the preparation that you are going to use, your coffee will be fresher and will begin to release its aromas once it is ground. Do you offer brewing instructions?

We have a mini blog "Brewing Tips" where we give some recommendations and recipes we made with professional baristas so you can practice recipes or dare to take your KOA coffee to your trusted coffee shop and ask for the preparations we recommend. The most important thing is to enjoy your coffee.

When I place an order, how long will it take to receive my order and how fresh will the coffee be?

We ship throughout the United States via the United States Postal Service and UPS. Transit time is usually 1 to 5 days, depending on how far you are from FL. Once your order is in the hands of the postal carrier, we trust them on how quickly the package is delivered.

If you are outside the United States, we will find the best logistics agent with the best timing and accountability so you can have your shipment as soon as possible.

Which destinations can you cover?

We ship throughout the United States via the US Postal Service and UPS at the moment.
